Ginza Kyubey, founded in 1935, is one of Tokyo’s most venerable sushi institutions and widely regarded as a benchmark for Edomae-style sushi in the Ginza district. Unlike many six-seat counters, Ginza Kyubey offers a spacious multi-level interior and counter seating arranged in open stations, which lend it a livelier, more approachable atmosphere while still showcasing precision sushi preparation by multiple skilled itamae.  Anago, uni, and ikura wrapped in nori were among the first ever served in their battleship-style maki at Kyubey, which pioneered many such innovations under founder Hisaji Imada, and are still served today in a warm, unpretentious atmosphere.
